Canestrato d'Aspromonte cheese
Canestrato d'Aspromonte is produced with ewes', goats' or cows' milk, or a mixture. It has a cylindrical shape with a height of 7-8cm, a diameter of 17-20cm, and its weight varies between 1 and 2kg. The rind is firm and light brown, with streaks produced by the reed baskets in which it is left to drain. The flavour is delicate and spicy. It matures for 4 to 5 months and is made throughout the year in the mountains of Aspromonte in the Italian province of Reggio Calabra.
