Caciottina canestrata di Sorrento cheese

Caciottina canestrata di Sorrento is a soft, fresh, unpasteurised, cows' milk cheese from the Campania region of Italy. The milk is heated to 36-37°C, rennet is added and the curd is placed into a wicker basket in which it is left to dry. Cylindrical in shape, it weighs just 20 to 50g and is wrapped in paper.
