Caciotta vaccina frentana cheese

Caciotta vaccina frentana is an Italian, soft, unpasteurised, cows' milk cheese made from veal rennet. It is produced in the plains and hills of Frentano in the province of Chieti (Abruzzo).

The cheese is matured for 1 to 6 months or more, and is semi-cooked. It has a cylindrical shape with a diameter of 12-20cm, a height of 7-12cm, and an average weight of 800 grams. The exterior is thin and white, which tends to yellow as it matures, and is marked by the rattan basket in which it was shaped. . The interior is soft, compact, with few holes and is white to pale yellow.
