Caciotta di Brugnato cheese

Caciotta di Brugnato is a cows' milk cheese from the Media Val di Vara area of Liguria. It has a cylindrical shape with a height of 10cm and a diameter of about 18cm - 30cm. The weight varies from 200g up to 5-7kg. It is often rindless, but if it does have a rind, it is very fine and if the cheese is matured, it becomes very dark. The interior is white when fresh, and pale yellow when semi-matured. It has a dense texture and a delicate taste of fresh milk, increasing with flavour as it matures.
