Caciocotto cheese

Caciocotto is a fresh cheese made with ewes' milk and/or cows' milk throughout the region of Abruzzo in Italy. It has a cylindrical shape and comes in various sizes, although it is usually produced in small sizes. Rindless, the cheese is firm, supple, with very few white holes.
