Caciocavallo di Bufala cheese

Caciocavallo di Bufala is made from unpasteurised water buffalo milk. It is a traditional, stretched curd cheese formed into a gourd shape and tied at the end with a cord to hang from.

The cheese is matured for 3 months and typically weighs around 2 kg. It is spun by hand with wooden ladles and salted in brine. It is full-flavoured, yet light and a smoked version (using wheat straw) is also available.
