Cacio figurato cheese
Cacio figurato is an unpasteurised cows' milk cheese from Sicily. It is unusual in that the cheeses are shaped into animals such as horses, deer and chickens. It is a spun cheese produced in the area of Nebrodi and the province of Palermo. Lamb or goat rennet is used and the process followed is the same as the provolone cheese of the same area. After shaping, the cheeses are salted in brine. The pale to amber yellow rind is thin and the interior is white to yellow. It has a soft, compact texture and a sweet and delicate flavour. About 500g in weight, these cheeses are often given as gifts.
