Type of squash

As autumn approaches we always have a glut of squashes so this is a good use to put them to.

Ingredients

Method

  1. Heat the butter in a saucepan and sautee the onions until soft, about 4 minutes
  2. Add the squash, potatoes, stock and paprika, bring to the boil, reduce the heat, cover and simmer for 35 minutes or until the vegetables are soft
  3. Allow to cool a little and then pour the mixture into a food processor and blend until smooth
  4. Season with salt and pepper
  5. Reheat and stir in the cream and chives or parsley

Serving suggestions

Serve hot
