Buchette de Provence/ Buchette au Romarin cheese

Buchette de Provence or Buchette au Romarin is a farmhouse cheese made from unpasteurised goats' milk which is shaped by hand, It comes from the plateaus of Provence-Alpes Côte d'Azur.

It is soft, smooth, rindless and of medium strength. It is eaten fresh, just drained. It comes in the form of a small cylinder of 14 cm long, 3 cm in diameter. It weighs about 120 g. To give a more Provencal appearance, one or two sprigs of rosemary are arranged on the surface.
