Brique Brebis cheese

Brique Brebis is a ewes' milk cheese produced in Le-Puy-en-Velay in the Haute-Loire département of the Auvergne. Weighing just 200g the cheese is best consumed between April and August, although it is still good during the rest of the year. It is matured for 20 days.
