Brinkburn cheese

Brinkburn is produced by the Northumberland Cheese Company, at Blagdon in the south of Northumberland, using pasteurised goats' milk and vegetarian rennet.

It is a mould-ripened cheese, which is velvety soft on the palate, light-textured and pleasingly refined, with a delicate edge to lengthen and liven things up. It is a 'tomme' shaped cheese.

It is now sold in New York’s finest deli and it won a Gold in the 2006 World Cheese Awards.
