Bouquet garni specifically for poultry dishes
Ingredients
Version 1
- 1 sprig of lemon thyme
- 1 top of a celery stick, complete with leaves
- 1 sprig of parsley
- Green part of a leek
Version 2
- 1 sprig of lemon thyme
- 1 sprig of lovage
- 1 sprig of parsley
- 1 spring onion, bruised
Version 3
- 1 sprig of marjoram
- 1 sprig of rosemary
- 1 sprig of summer savory
Version 4
- 1 bay leaf
- 1 sprig of French tarragon
- 1/2 stick of lemon grass, bruised
- 1 sprig of parsley
Method
- Tie the ingredients with kitchen string or wrap in a piece of muslin. Remove before serving and discard.
