Boulette d'Avesnes cheese

Boulette d'Avesnes cheese cows’ milk cheese from Avesnes. It has a soft beer-washed rind and weighs about 150g-250g. It has an aroma and flavour similar to Maroilles cheese, but is flavoured with parsley, tarragon, pepper or cloves.

Conical in shape, it is produced by hand, and then covered with paprika or achiote, which gives it its red-brown colour and slightly pungent flavour. It is quite a salty cheese and is at its best from May to September having been matured for 10 weeks.
