Boschetto al Tartufo cheese

Boschetto al Tartufo is a semi-soft cheese made with a mixture of pasteurised cows' and ewes' milk. It is produced by the Il Forteto Cooperative in Mugello in Tuscany.

The cheese has a sweet and mild flavour, a mild aroma and a creamy texture. It contains white truffles which adds a mushroomy taste to the cheese. It is matured for less than 2 months.
