An interesting looking mayonnaise-style garlic sauce recipe that could also be made with normal garlic.

Ingredients

Method

  1. Chop the black garlic as finely as possible.
  2. Place into a pestle and mortar.
  3. Add the sea salt and grind together.
  4. Transfer to the bowl of a food processor.
  5. Add the egg yolk and mustard powder. Blend together.
  6. Leave the food processor running. Add a small drop of olive oil.
  7. Gradually add the oil a little at a time until a smooth and creamy consistency has been reached.
  8. Season with pepper and add lemon juice to taste.

Serving suggestions

Use as a dip.
