Bergfex cheese

Bergfex is a pasteurised cows’ milk cheese from Voitsberg, Styria (Steiermark).

The ivory coloured cheese has a strong, sharp, aromatic taste and a smooth, melty texture with occasional, small, round holes. It has a natural reddish rind.

Matured for four to six months, the cylindrical cheese weighs about 6.2 kg.
