Belmonte cheese

Belmonte is a cows' milk cheese Pagazzano in Lombardy, Italy and is marketed unthe brand names of Teodolinda and Colombina.

It has a round shape with a height of 40-80 cm, a diameter of 13-20cm and a weight of 900g to 2 kg. It has a thin rind which is smooth and supple and ranges from pale yellow to pink with shades of reddish and the cheese is compact and homogeneous. Maturing time ranges from 40 to 80 days.
