Begiunn cheese

Begiunn is a cheese made from the whey of cows' milk. It is produced during the summer in Sauze d'Oulx and Cesana San Sicario (Upper Susa Valley), Bardonecchia in Piemnote.

The cheese matures in about a month and has a light crust on the surface. The interior is creamy and the grainy texture is pale yellow.
