Origin
- Bay lough or Bay Lough cheese is a hand-made hard cows' milk cheese, typical of Irish farmhouse cheeses.
Milk type
- Unpasteurised cows' milk from a herd of Friesian cows, grazed on the foothills of the Knockmealdown Mountains, although a small amount of Baylough cheese is also made using pasteurised milk.

- Mild flavour with a low salt content.
