Bastardo del Grappa cheese
Bastardo del Grappa is mixed milk cheese made with cows' milk, goats' milk and ewes' milk from Massiccio del Grappa in the provinces of Belluno, Treviso and Vicenza. It can be made using pasteurised or unpasteurised depending on the producer.
The cheese has a soft yellow interior which changes colour and becomes grainier depending on its maturity, and has small holes. The rind is dry and clean looking.
Having a pleasant aroma, the cheese has a sweet, yet savoury flavour which becomes more intense with age. It is generally matured for around 25 days and can weigh from 2.5 to 5 kg. It has a diameter of 25 to 30 cm, and a height of 5 to 8 cm.
