A simple but unusual way of making rice pudding from Colombia.

Ingredients

  • 110 g raisins
  • 1 tablespoon butter
  • 500 g pudding rice
  • 4 tablespoons sugar

  • ½ teaspoon salt
  • 680 ml water
  • 240 ml strong coffee mixed with red wine

Method

  1. Melt the butter in a saucepan and add the raisins.
  2. When they are plump, add the remaining ingredients and leave to simmer until the rice is cooked and has absorbed the liquid.
