Amatriciano cheese

Amatriciano is a high fat (70%) Friesian cows' milk cheese. Round in shape, it weighs 1.8kg. It has a thick dark yellow rind and a yellow interior. It is not matures and is produced only in spring and summer. It is produce by the Società Cooperativa Produttori Latte di Amatrice and is sold in shops in Rome.
