A cold Ecuadorian sauce made from cottage cheese.

Ingredients

  • 1 large tomato, peeled, seeded and coarsely chopped
  • Green or red chillies, to taste
  • 250g cottage cheese
  • Seasoning

  • 1 medium onion, finely chopped
  • 1 hard boiled egg, chopped

Method

  1. In a blender, combine the tomato, chilli(es), and cheese.
  2. Blend into a purée, but do not over-process.
  3. Season to taste and place in a bowl.
  4. Sprinkle with the onion and egg.

Serving suggestions

Serve as a sauce with potatoes and cooked green vegetables.

Variations

Add Crushed garlic if desired.
