Acidino cheese
Acidino aka Fior di Capra is a soft, fresh, pasteurised whole milk goats’ cheese with or without herbs. It is produced in the area of Altopiano Asiago, particularly in the city of Lusiana in the province of Vicenza.
The cheese has a short shelf life and undergoes a natural process of acidification, to which are added flavourings such as cumin, thyme, chives and cress together with salt. It has a delicate flavour which is slightly sour, but pleasant.
The cheese comes in small shapes, like sausages or truncated cones, which are wrapped in cling film and put in refrigerator until sold.
