2 Mönche cheese

2 Mönche (2 Monks) is a soft cheese of the Limburger type made with a mixture of cows’ and goats’ milk at the dairy at Schlierbach Monastery in Oberösterreich.

The reddish, mould rinded cheese has a smooth texture, with few, if any, small holes. It has a creamy flavour and a slight aroma of goats’ milk.

Weighing just 150 g, the cheese has a diameter of 8.5 cm and a height of 3 cm. It takes 3 to 4 weeks to mature.
